We will begin offering Beer School classes in 2026!

At Towaki Brewing Company, education is an integral part of our mission. Through our monthly Towaki Beer School — led by Kim Collins, a Certified Cicerone® — we invite guests to deepen their appreciation for craft beer by exploring its history, styles, ingredients, and brewing techniques. Each session is designed to be engaging and informative, offering both novice drinkers and seasoned enthusiasts the opportunity to refine their palates and expand their beer knowledge. Beer School reflects our commitment to quality, community, and continuous learning, all while celebrating the creativity that drives the craft beer industry.
Kim taught a variety of university-level courses for 13 years at Indiana University Bloomington, Metropolitan State University of Denver, and most recently Kalamazoo Valley Community College’s Sustainable Brewing Program. Her love of teaching is evident in every class experience.
To date, Kim has taught 54 Beer School classes in five and a half years in business at Guardian Brewing Company. She is passionate about recipe research, the art of barrel aging, and beer pairing.
